Vegetable soups have many benefits. They are the perfect soothing comfort food, they’re healthy, taste fantastic and they’re packed with nutrients and fibre.
The key when cooking soups is to use seasonal fresh vegetables! In this video you’ll discover how easy and quick it is to prepare them.
Fun fact: in Italy we call these blended soups ‘velvet soups’ because of their luxurious texture…buon appetito!
Recipe: Velvet Veggie Soup
Ingredients
Red cabbage, 700 g
Potatoes, 200 g
Salt
Extra Virgin Olive oil to drizzle
Shredded red cabbage to decorate
1 small onion, finely chopped
Feta cheese, 80-100 g
Fresh mint leaves
Method
- Wash the cabbage and potatoes; then chop the cabbage into small pieces and dice the potatoes into cubes.
- Put the vegetables into a pan and cover with water; add a pinch of salt, and boil for 15 minutes.
- Place the vegetables into a jug with some water from the pan and blend with a hand-held blender – or a food processor.
- Pour the soup into a bowl and top with small pieces of chopped cabbage, finely chopped onion, cubes of feta cheese, and some fresh mint leaves.
