Breakfast Like A King. Yogurt, Fruits & Bruschetta

A special breakfast, when you need all the energy to get through a long day at work: Rooibois Tea, Yougurt with Organic Spelt Flakes and Kiwi + Bruschetta with Artichokes.

Yogurt with fruits is a popular combination for breakfast: proteins, fats and simple carbohydrates. The addition of bruschetta will turn it into a super energetic breakfast, the breakfast of a King. The most popular bruschetta is made with extra-virgin olive oil, basil and fresh tomatoes but you can use a bit of creativity to personalise it yourself. Today I choose bruschetta with artichokes but you can make it with other vegetables, anchovies, tuna, sesame and sunflower seeds.

Bruschetta Method

Slice the bread 1cm thick and toast it either in the oven at 230° C or in a toaster. Add then chopped chargrilled artichokes with a drizzle of extra-virgin olive oil, a pinch of salt and grounded black pepper. If you prefer, you can make a delicious artichoke cream. Blend the artichokes (chargrilled or canned artichokes hearts) together with a few parsley leafs, a drizzle of lemon juice, extra-virgin olive oil, salt and black pepper. Add the artichoke cream on top of the bruschetta and enjoy it as it is or put it back in the oven for 2-3 minutes if you prefer it warm.

The breakfast includes a large cup of Rooibois tea, also known as African Red Tea. Intense flavour with no caffeine, it’s rich in antioxidants and contains vitamin C, calcium, iron and magnesium. If you haven’t tried it yet, I strongly advise you do : )
